Garlic scapes are a unique part of garlic that many thought you couldn’t use. Turns out it is a delicious side to any meal!


  • 1 tablespoon oil for frying
  • 2 Tablespoons Tamari (soy sauce)
  • 1 Tablespoon Sesame oil
  • 1 Tablespoon water
  • 1 tablespoon Ginger, grated
  • ½ tsp chili flakes, a dash of chili oil, or ½ chopped Thai chili
  • 1 handful of garlic scapes (about 10)


  1. Trim the flower head and any tough stalk from the scapes
  2. Chop into 2 inch long pieces
  3. Grate the ginger
  4. Mix together Tamari, sesame oil, water and chilies and set aside
  5. Heat the cooking oil in a wok on medium-high
  6. When ready toss the scapes in and cook for 2-3 mins, until soft (the longer they cook, the less garlicky they become)
  7. Toss the ginger in and cook for 1-2 mins longer
  8. Add the dressing, heat through and serve
