Directions for Pasta

  • Boil 4 L of water in a large pot and add 1-2 tablespoons of salt
  • Add pasta of your choice (we recommend penne!)
  • Stir the pasta to make sure it doesn’t stick
  • Drain the water out

Directions for Pasta Sauce

  • Preheat oven to 350F.
  • Put olive oil in oven safe pan and brown sausages (or eggplants) at medium high heat on stove.
  • Start layering flavours by adding bay leaves and 2 sprigs each of oregano and marjoram.
  • Add onions, celery, chilies and garlic. They should soften, not burn!
  • Add cherry tomatoes.
  • Once you can hear the pan sizzling, add water to allow the pan to simmer.
  • Cook until tomatoes start to lose some moisture and become sauce.
  • Drizzle balsamic over sauce and season with pepper.
  • Toss sauce around, mixing it well.
  • Take remaining herbs, drizzle, olive oil, and place over sauce.
  • Place pan in oven for 25 minutes.
