Our latest Surrey cooking class focused on using adapted kitchen tools to help make meal preparations quick and easy, we were joined by guest chef and SCI BC Peer, Dan Duffy. Follow the recipes below to learn how to make breakfast egg bites and a yummy (sausage or eggplant) pasta!

Ingredients
Egg Bites
Serves: 4
Total time: 30 mins
- 8 Eggs
- 1 Red onion
- 1 Red Pepper
- 1 Cup Spinach
- 500 ml Cottage Cheese
- ¾ Cup Grated Cheddar Cheese
Spicy Sausage (or Eggplant) Pasta
Serves: 4
Total time: 45 mins
- 1 Cup Dry Penne (Or your choice of pasta)
- 1 lb Sausage or Eggplant – 2 inch pieces
- 2 lb Ripe Cherry Tomatoes – sliced in half
- 4 Sprigs Fresh Oregano
- 4 Sprigs Fresh Marjoram
- 3 Fresh Bay Leaves
- 1 Medium Red Onion – finely chopped
- 3 Stalks Celery – finely chopped
- 2 Cloves Garlic – finely chopped/minced
- 2 Chilies – seeds removed
- 1 T Olive Oil
- 1 T Balsamic Vinegar
- Water
- Fresh Parmesan – for sprinkling on top
Directions for Egg Bites
- Preheat oven to 350F.
- Dice up vegetables and evenly divide into muffin tins.
- Beat eggs in a large bowl, add cottage cheese, and season with salt and pepper.
- With a ladle pour egg mixture over the veg in the muffin tins.
- Finally sprinkle cheddar cheese evenly over egg bites.
- Place muffin tin on a baking sheet before putting the egg bites in the oven to prevent spillage.
- Bake for 18-20 mins or until set.




Directions for Pasta
- Boil 4 L of water in a large pot and add 1-2 tablespoons of salt
- Add pasta of your choice (we recommend penne!)
- Stir the pasta to make sure it doesn’t stick
- Drain the water out
Directions for Pasta Sauce
- Preheat oven to 350F.
- Put olive oil in oven safe pan and brown sausages (or eggplants) at medium high heat on stove.
- Start layering flavours by adding bay leaves and 2 sprigs each of oregano and marjoram.
- Add onions, celery, chilies and garlic. They should soften, not burn!
- Add cherry tomatoes.
- Once you can hear the pan sizzling, add water to allow the pan to simmer.
- Cook until tomatoes start to lose some moisture and become sauce.
- Drizzle balsamic over sauce and season with pepper.
- Toss sauce around, mixing it well.
- Take remaining herbs, drizzle, olive oil, and place over sauce.
- Place pan in oven for 25 minutes.
